Moon Under Water Brewery – 2015 Tempus Corvi Sour Saison Review
As an extremely limited release from Moon Under Water Brewery comes the 2015 Tempus Corvi Saison Aged in French Oak Pinot Noir Barrels. If you want to try this beer you need to head over to Victoria to the brewery itself. Being released on June 16th the beer likely be sold out faster than you can say “Moon Under Water”. As a Sour Saison, this is a beer brewed by Moon Under Water purely for the passion of craft beer. Sealed in 500ml corked and capped bottles, the Tempus Corvi will be the envy of your friends if you can find a bottle. Pouring from the bottle this Sour Saison appears as a cloudy, golden-straw colour with noticeable floaties suspended in the beer. Topped with a finger and a half of head the Tempus Corvi smells of a sharp sour but also has a nice smoothness from the wine oak. On the tongue, a bubbly and quite sour flavour hits the palate in a fairly intense way. Quickly, the sour intensity is joined by the smoothness of wine oak. The Pinot Noir flavours do not come through with any vigor but the wine oak is enjoyably and adds a great complexity and drink-ability to the flavour. The finish is rather neutral given the flavour intensity making it more sessionable than you may expect. If you can get your hands on a bottle of this Sour Saison and you have a thing for sour beers then you will not be disappointed.
