Persephone Brewing Co. – Single Hop Calypso Pale Ale Review
The second beer to be released in the Persephone Brewing Company’s new series of Single Hop pale uses uses Caylpso hops. This series truly isolates the unique qualities of each hop with no masking flavours to compete. From the bottle labeled #2 the beer pours as an amber colour topped with two full fingers of head. The head settles leaving thick lacing on the glass. An aroma of citrus and crisp apple are accompanies by a nice northwest style pine flavour. The calypso hop adds a crispness to the beer while a malted base remains apparent. The flavour is mid-bodied and an apple-pear flavour comes through in addition to the citrus notes. Toasted malt flavours come through as well with a crisp and fresh bitterness which builds as the flavour progresses. A rather strong bitter tone is left lingering at the finish of the flavour. This is a rather bitter but big flavoured pale ale which really highlights the complexity and unique flavour profile found in the Calypso Hop.
