Phillips Brewing Co. – 2013 Instigator Doppelbock Review
The Instigator Doppelbock is back for 2013 in a big way. Phillips has brewed up this German style dark lager and expectations are very high. The beer pours a copper colour with three fingers of thick and fluffy head which laces the glass as it settles. Through this head comes an aroma of toasted malt, caramel, German hops and a breadiness. Despite being 8.5% the Instigator does not smell very much of alcohol. The flavour starts off with a hit of carbonation which settles into a creamy texture quickly. The mild, smooth toasted malt, light hops and bread flavour build into a traditional doppelbock flavour and leave the pallate with a smooth, lightly bitter finish. This beer is dark, strong and delicious in a fairly traditional package. There is a reason that the doppelbock was once used to sustain monks through the fasts of advent and lent. This beer is high in alcohol and more importantly delicious.
